Tomato soup is one of my all-time favorite soups. I admit at our house it usually comes from a can. Not this time. My Mom grows a bumper crop of tomatoes every summer and this is one way she puts all of those tomatoes to good use. I embellished Mom’s recipe with a little half and half and I’m pretty sure she cuts the half and half out of Dad’s diet as much as possible! Mom roasts the tomatoes with garlic and olive oil, processes them and freezes them in batches. So smart, she has roasted tomato soup, on demand, all year long. I am just hoping I actually get some tomatoes grown this year. It has still been a little cool for my garden to really take off. Roasting the tomatoes takes a little time but I am telling you the flavors that develop are worth every minute. This was not the can soup my family is used to and I am afraid that can soup will never be accepted again!

Now for that delicious soup recipe! I’ve included a few extra photos to show the food mill in action.
Roasted Tomato Soup
Ingredients:
- 5 pounds tomatoes (I used 2 pounds Campari & 3 pounds plum tomatoes)
- 1 or 2 heads of garlic
- 1 teaspoon sea salt
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1/2 cup olive oil
- 1 cup half and half
- 1/2 to 1 cup water
- 1 teaspoon sea salt
- 1 teaspoon basil
Cooking Directions:
Line two sheet pans with foil. Cut tomatoes in half or if they are large in quarters. Cut tops off of garlic. Drizzle tomatoes and garlic with olive oil and season with 1 teaspoon salt, sugar and pepper. Place in a 350 degree oven for 1 hour 30 minutes. Turn oven off and allow tomatoes and garlic to cool for one hour in the oven.
Place the medium grinding disc in food mill (the medium disc will add a little texture to your soup, whereas with the fine disc it will provide a smoother soup). Place over a large sauce pan. Carefully squeeze roasted garlic from papery skin and discard skin. Using a rubber spatula, scrape one pan of tomatoes and garlic into food mill. Turn handle until you only have skins and seeds remaining. Carefully lift food mill and scrape the bottom into the sauce pan. Discard seeds and skins and repeat with remaining tomatoes and garlic. Don’t forget to get the yummy stuff off of the bottom of the mill.
Add half and half, water (to desired consistency), salt, and basil to tomato mixture. Place sauce pan over medium heat, whisking to combine. Stir until heated through.
Serve with grilled cheese and garnish with a swirl of cream, grated Parmesan or fresh basil if desired.
*My batch yielded 5 cups.

FINALLY got a bunch of tomatoes from the garden (we were in a drought this summer) and tried this soup. the flavor is fantastic and i just used milk cuz it’s what i had on hand. i’m trying it the way you posted it next time-half and half is now on my list and this recipe is going in my box. thanks!
got another bunch of tomatoes and trying this wonderful soup again. my husband said he couldn’t stand to be around me after eating it again, so i’m gonna lessen the garlic
