Goober Doodles

Goober Doodles, really, yes really.  It always seems that I make all kinds of cookies and never know what to call them except by their fourteen ingredients; so today I present you with Goober Doodles.  A thick peanut butter cookie filled with chocolate chips and Goobers, you know chocolate covered peanuts.  You can never go wrong with chocolate and peanut butter and these cookies will not disappoint.  I bought the Goobers for a different recipe idea but these cookies were just begging for more pea-nutty goodness.  I will be making these again soon, as like everything else in my house, they were gone before I knew it.  Someone asked me the other day how I eat all of this sweet stuff and still look good.  Well good is in the eye of the beholder, and thank you by the way, but it’s all explained with the fact that I have 2 very hungry teenage boys.  If we didn’t raise our own beef I would be looking for a couple more jobs just to feed those two.  These cookies would be great for a bake sale or to pack on a picnic, or just to show appreciation for a kind someone in your life.

Goober Doodles

Ingredients:

  • 1 cup butter softened
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup peanut butter
  • 2 1/3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Goobers (chocolate covered peanuts)
  • 1 cup semi-sweet chocolate chips

Cooking Directions:

Preheat oven to 375 degrees.

Add butter to a mixing bowl and beat at medium speed until creamy.  Add sugars mixing until combined, add eggs and vanilla and continue to beat until all combined. Next beat in peanut butter.  Add flour, baking soda and salt all together and beat just until incorporated.  Fold in Goobers and chocolate chips.

Scoop onto a greased or lined baking sheet about 2 inches apart.  Bake for 10-12 minutes or until edges are browned.

Remove to a wire rack to cool.
