This was a quick and super tasty lunch that I put together in just a few minutes. I had some leftover rice and quickly steamed some green beans to go with the smoked salmon. All and all this made quite the lunch, a nice variation from our standard of hamburgers. The recipe is for two but you could easily double it for four. It would also make a nice, light supper for the coming warm weather. Warm weather is coming here, right? Eventually? Please don’t tell me if it is not.
I received notification that my appliances shipped yesterday and that I would receive them next week, I am SO EXCITED! Hopefully we can get them right in and finish up a few small items and then we will have the big reveal. As for the next few days, our oldest son is competing at the regional track tournament, our middle son is helping my husband get ready for branding and I am going with our youngest on the kindergarten field trip, so this should be interesting to say the very least.
Smoked Salmon Rice Bowl
Ingredients:
- 1 1/2 cups cooked white rice
- 4 oz smoked salmon
- 1/2 cup cooked green beans
- 4 teaspoons fresh lime juice
- 1 teaspoon toasted sesame oil
- 2 tablespoons toasted, sliced almonds
- lime slices for garnish
Cooking Directions:
Divide rice into two bowls and top each with half of salmon of salmon and green beans.
In a small bowl combine lime juice and sesame oil. Heat for 20 seconds in the microwave, stir and drizzle over salmon and green beans. Top with toasted almonds and garnish with lime slices.
