The kitchen remodel is on hold until my new cook top, which I am super excited about, and the dishwasher arrive. I decided to keep my oven and refrigerator because they are still in pretty good shape. I have to say the kitchen is coming together so nice and I am loving the extra space! I really can’t wait to show it to you! The oven is in and working so the first thing I had to do was whip up some cookies. Espresso powder is my new favorite cookie ingredient, it adds a little depth to the flavor and enhances the chocolate chips and let’s face it oatmeal and chocolate chips go hand in hand. These cookies received rave reviews and quickly disappeared, I kind of wished I had doubled the batch. If you have a hankering for something sweet these will surely do the trick!
Espresso Oatmeal Chocolate Chip Cookies
Ingredients:
• 1/2 cup butter, melted
• 3/4 cup brown sugar
• 1 egg
• 1 teaspoon vanilla extract
• 1 teaspoon espresso powder
• 1 cup all purpose flour
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1 1/2 cups oats
• 1 cup semi sweet chocolate chips
In a large mixing bowl add melted butter, sugar and beat with an electric mixer until combined. Add egg, beating until incorporated, add vanilla and espresso powder, continue to mix until combined.
In a separate bowl combine flour, baking soda, salt, and oats. Add into wet ingredients and mix thoroughly. Fold in chocolate chips.
Scoop into balls and place 2 inches apart onto a greased or lined baking sheet. Bake 10-12 minutes or until lightly browned. Remove to a wire rack to cool.
Yield 24 Cookies

I am positively obsessed with espresso powder too! I put it in almost all of my chocolate desesrts! Great minds think alike! I have an espresso-laced dessert comin’ soon!!
