I wasn’t sure quite what to call this dessert. It’s not really a cake or a brownie or a cookie, it’s just really delicious! I love using local honey to cook with and I bought a big one pound jar of honey the other day. I put that honey to good use in these bars with a little brown sugar and some peanut butter it came out moist and delicious with the chocolate topping (with more honey!) and the great crunch from the honey roasted peanuts. Honey, honey, honey! Whether your packing lunches, or baking to brighten some one’s day these sweet little bars fit the bill.
Peanut Butter Honey Bars
Ingredients:
for the bars:
1/2 cup butter, softened
1/2 cup peanut butter
1/4 cup honey
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
for topping:
1/2 cup semi-sweet chocolate chips
1 tablespoon honey
1 tablespoon half and half or milk
3/4 cup honey roasted peanuts, coarsely chopped
Cooking Directions:
Pre-heat oven to 350 degrees. In a large mixing bowl, add softened butter and peanut butter and beat with an electric mixer until well creamed. Add honey, brown sugar, egg and vanilla. Beat until combined. Add flour, baking soda, and baking powder beating until all combined. Pour into a greased 8″ x 11.5″ glass baking dish. Bake for 20-25 minutes.
Meanwhile in a small microwave safe bowl combine chocolate chips, honey and half and half. Microwave for 3o seconds and stir, continue to cook if necessary, stirring until smooth. Pour chocolate over cooked bars when they come out of the oven, spreading until bars are all covered and smooth. Sprinkle chopped peanuts over bars. Cool completely. Cut and serve.
