There is something very comforting about a cheesy rice casserole and this one has spinach and mushrooms for a filling and nutritious side dish that is ready in no time. Plus it has smoked Gouda, and who can resist smoked cheese? I paired this with sirloin steak and Colby-Jack Beer Bread, it was a very enjoyable meal.

Hi
Is there any other types of cheese I could use for this recipe.
Jackie, you could use just about any semi-soft cheese in this recipe. I think something like Colby-Jack, mozzarella, or monterey jack would taste really well.
This looks and sounds amazing! I am on such a mushroom kick right now. This is a must try recipe! Thanks!
