Smoked Turkey and Caramelized Onion Quesadillas

Quesadillas are great for so many reasons, they cook in about five minutes, a great way to use up left overs, easily made to suit every one’s tastes and the possibilities are endless.

We received a smoked turkey for Christmas from a local business.  I thought it was a ham until I unwrapped it, which was pretty funny when I figured out my Christmas ham had wings, maybe this isn’t a ham….  Anyway it was utterly delicious and we ate every last bite.  I used the last bits of the dark meat to make these quesadillas.  Of course you can substitute chicken or whatever you have handy.  The caramelized onions and melted cheese simply make these  irresistible.  I threw these together as a quick snack for the boys; you can easily double the recipe for a bigger crowd.

Smoked Turkey and Caramelized Onion Quesadillas

Ingredients:

3 tablespoons butter

2 medium onions, thinly sliced

1 tablespoon sugar

1 cup smoked turkey, diced

1/2 teaspoon garlic

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon salt

3 burrito size flour tortillas

1 tablespoon butter

1 cup mozzarella cheese, shredded

Cooking Directions:

In a skillet, melt 3 tablespoons butter, add onions and sprinkle with sugar.  Cook, stirring often, over medium high heat until onions are caramelized.  Add turkey, garlic, cumin, chili, and salt and continue to cook until turkey starts to brown.  Remove from heat.  Heat a griddle until hot, spread 1/3 of butter onto one side of a tortilla and place butter side down.  Sprinkle with 1/3 cup of shredded mozzarella over half of tortilla, top with 1/3 of turkey and onions.  Fold tortilla over in half, turning to brown both sides.  Repeat with remaining ingredients.  Cut into wedges and serve with sour cream and salsa if desired.

Oh my…what a fabulous way to use up leftover turkey or chicken! I wish I had received a smoked turkey as a gift. You are so lucky!

Anyway, in case I haven’t said this already…thanks so much for your amazing blog, Milisa! I hope you and those dear to you have a Happy New Year! I am looking forward to making more of your delicious recipes in 2011!

I would love a ham with wings for Christmas. LOL That’s funny! ;)
Your quesadillas look like a perfect way to use up that last bit of turkey. Add a little brie cheese and I’m all over this! :)
