Toffee Apple Streusel Bread

I recently came into a bounty of apples and this quick bread is a perfect way to enjoy them.  It’s moist and sweet with a toffee streusel filling that is so wonderful in the morning with a cup of coffee.  I think next time I will make two loaves because it disappeared in a flash.  This will make a wonderful addition to my Christmas baskets that I make for family and friends.  You will love the wonderful aroma radiating from your oven and enjoy the taste of the fall harvest.

Toffee Apple Streusel Bread

Ingredients:

1/2 cup butter

1 cup sugar

2 eggs

1/4 cup vanilla yogurt

1 teaspoon vanilla extract

2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

2 cups shredded peeled tart apples

Filling:

1/4 cup brown sugar

1/4 cup all purpose flour

2 teaspoons cinnamon

1/4 cup butter

1/4 cup toffee bits

Topping:
1/4 cup powdered sugar for garnish

Cooking Directions:

In a mixing  bowl, cream butter and sugar.  Add eggs, beating well.  Beat in yogurt and vanilla.  Combine the flour, baking soda, baking powder, salt and cinnamon; add to creamed mixture.  Fold in apples, set aside.

For filling, combine brown sugar, flour and cinnamon and toffee bits.  Cut in butter until mixture is crumbly.

Pour half of bread batter into a greased 9 x 5x 3-inch loaf pan.  Sprinkle filling over batter and pour remaining batter over the top.  Bake at 350 degrees for 55-60 minutes or until a toothpick comes out clean.  Cool for 10 minutes before removing from pan to a wire rack.  Sprinkle top with powdered sugar.

I woke up thinking of making something with apples today, and here is the perfect recipe! It looks and sounds amazing, and I want it for breakfast right now! As usual, your photo is gorgeous, Milisa! I love the apples in the background!
