Brownies with Cream Cheese Icing

Easy no-fuss brownies slathered with cream cheese icing and sprinkled with mini chocolate chips, yum, yum, yum!  I don’t usually wait around for brownies to cool down for icing, but the cream cheese icing is totally worth waiting for.  This icing is so good I had a hard time getting the kids to quit eating it out of the bowl.  Brownies are so quick and easy and perfect satisfaction for my severe sweet tooth.  Whip some of these up for your next dessert!

Brownies with Cream Cheese Icing

Ingredients:

for brownies:

1/2 cup butter, softened

1 cup sugar

3 eggs

1 teaspoon vanilla

1/2 cup all purpose flour

1/2 cup cocoa powder

1 teaspoon baking powder

for icing:

4 oz cream cheese, softened

2 tablespoons butter, softened

1 teaspoon vanilla

3 cups powdered sugar

1/2 cup mini chocolate chips

Cooking Directions:

Pre-heat oven to 350 degrees.  In a large mixing bowl beat butter and eggs, add vanilla and beat until well combined.  Add flour, cocoa and baking powder, beat until all combined.  Pour into a greased 8 inch square baking dish.  Bake 17-20 minutes or until a toothpick inserted in center comes out clean.  Set aside to cool completely.

While brownies are baking in a large mixing bowl beat cream cheese and butter until fluffy, add vanilla and gradually beat in powdered sugar until icing is thick and smooth.  Spread over cooled brownies and sprinkle with mini chocolate chips.  Cut into squares and serve.
