Lemon Fluff

I have been looking for this recipe for a very long time.  My Aunt Patsy used to make it for every family get together and it was always my favorite.  I didn’t know what to call it, I just thought it was lemon flavored and it has a fluffy texture, well it’s lemon fluff, duh!  My cousin and I asked everyone in the family and no our only clue was her mom thought it had jello in it. I tried lemon ice box dessert and while that is super yummy, it just wasn’t it.  I found this recipe from Pioneer Woman’s Tasty Kitchen, posted by Twinks.  So thanks a ton to Twinks, who has many great recipes on Tasty Kitchen.  To all you and to my family, here it is Aunt Patsy’s Lemon Fluff!

Lemon Fluff

Ingredients:

1 box lemon jello (3 oz)

1 3/4 cups very hot water

1/4 cup lemon juice

1 cup sugar

1 can evaporated milk (12 oz) chilled

*chill your mixing bowl too, for better results

2 1/2 cups vanilla wafers, crushed

Cooking Directions:

Combine the jello, water, lemon juice and sugar in a mixing bowl, and stir until jello is dissolved.  Chill until partially set, about 1 hour.

Just before jello is set, pour the chilled evaporated milk into a large mixing bowl and whip until stiff peaks form.  Fold together with jello mixture.

Pour 2 cups of vanilla wafer crumbs into a 13X9-inch baking dish.  Top with jello mixture, then sprinkle remaining wafer crumbs. Chill until set, at least 2 hours, but best if allowed to chill at least 4 hours.

Don’t you just love Tasty Kitchen? I’m so glad you found your aunt’s recipe! I have never had Lemon Fluff, but it sure looks like a perfect summer dessert recipe! :-)
