Toasted Almond Chocolate Chip Bars

During the summer we bale hay, lots and lots of hay, so I need quick and easy desserts that can be packed in a lunch box, and that are easy to eat on the run.  These are ideal, super tasty and easy to bake and cut into bars, way quicker than scooping out  and baking individual cookies.  I love how the almonds toast on top, they add a lot of flavor and a little crunch.  Bake some up and you’re sure to get rave reviews!

Toasted Almond Chocolate Chip Bars

Ingredients:

1/2 cup butter, softened

1 cup brown sugar

1/2 cup sugar

2 eggs

2 tablespoons brewed coffee

2 cups all-purpose  flour

2 teaspoons baking powder

1 cup chocolate chips

1/3 cup sliced almonds

Pre-heat oven to 375 degrees.  Grease a 8 x 11 1/2 x 2-inch baking dish (or equivalent).  In a large mixing bowl, combine butter, sugars, eggs, and coffee.  Beat with an electric mixer.  Add flour, and baking powder. Continue mixing until well combined.  Stir in chocolate chips and spread into baking dish.  Sprinkle with almonds and bake for 25-27 minutes or until bars are browned around edges and a toothpick inserted comes out clean.  Cool completely and cut into squares.
