Barbecued Guacamole Burgers

Barbecue Guacamole Burgers

Guacamole is essential to any backyard barbecue and adds a great layer of flavor to those tasty grilled burgers.  This burger is basted  in barbecue sauce while it’s still on the grill for a wonderful coating.  Talk about delicious, your family and guests will be standing in line for more.  My guacamole is full of flavor without being spicy.  If you need the spice add about half a diced jalapeno or a few splashes of pepper sauce.  It’s simple and delicious.

Ingredients:

for hamburger patties:

2 pounds ground beef

2 teaspoons salt

1 teaspoon pepper

1 teaspoon granulated garlic

1/2 cup barbecue sauce

for guacamole:

3 ripe avocados

1 tablespoon fresh lemon juice

1 tablespoon mayonnaise

1 teaspoon salt

1/4 teaspoon fresh ground pepper

1 teaspoon granulated garlic

2 tablespoons cilantro, chopped

1/4 cup diced tomato

2 green onions, diced

for burger assembly:

2 cups shredded lettuce

8 hamburger buns

Cooking Directions:

Divide ground beef into 8 equal portions and pat into patties, season both sides of patties with salt, pepper, and garlic.  Grill over medium high heat for about 4 minutes per side, or until patties are cooked through.  Brush both sides of each patty with barbecue sauce and cook for an additional minute or two for the barbecue sauce to stick to the hamburger patty.

For Guacamole:

Cut avocados in half and carefully remove seed, set seed aside.   Scoop out avocado into a bowl and smash with a fork.  Stir in lemon juice, mayo, salt, pepper, and garlic.  Mix until well combined.  Stir in cilantro, tomato and green onions.  Place avocado seed in the center of your guacamole to keep it from turning brown.  (May sound a little weird, but it works!)  Cover and refrigerate until ready to eat.

Hamburger Assembly:  Toast buns lightly, if desired, layer on a barbecued hamburger patty, top with guacamole, lettuce and top side of bun.

I love this idea! I like having more specialized burgers like this so my counter/picnic table isn’t cluttered with a million condiments:)
