Cinnamon Coffee Cake

Cake for breakfast, what a wonderful start to a lazy Sunday, lovely with your morning coffee.  Not too complicated, just a few ingredients added to a store bought cake mix.  Really perfect for a quick impromptu dessert or after school snack.  I guess you could call this the perfect anytime treat.

Cinnamon Coffee Cake

Ingredients:

1 yellow cake mix prepared according to package directions, reserving 1 cup of batter

1/2 cup brown sugar

2/3 cup chopped pecans or sliced almonds

1 tablespoon cinnamon

1/2 cup cream cheese frosting

Cooking Directions:

Combine 1 cup of reserved batter with brown sugar, cinnamon and pecans.  Stir until well combined.  Pour plain cake batter into greased 13″ x 9″  baking pan.  Drop spoonfuls of cinnamon batter evenly over cake batter.  With a knife or spatula, swirl cinnamon batter through cake batter.  Bake in a 350 degree oven for 20 minutes or until a wooden pick inserted, comes out clean.  Cool for 5 minutes.  Heat cream cheese frosting in microwave for 20 seconds, stir and pour over warm cake, spreading to cover cake completely.  Serve warm or at room temperature.

Enjoy!
