This recipe was the brilliant creation of my Mother, who is a great cook. I think this is the recipe that won me over to liking broccoli when I was a kid. It makes a beautiful presentation and is creamy, rich and delicious. It does take a little time, but it is worth it. I like to serve it with mashed potatoes and a green salad.
Chicken Broccoli Ring
Ingredients:
3 chicken breasts, cooked and diced
20 oz frozen broccoli, cooked & drained really well
3 cans crescent rolls
8 oz cream cheese, softened
6 oz American cheese
1/2 cup minced onion
1 tablespoon butter
1 teaspoon granulated garlic
1 teaspoon salt
1/4 teaspoon black pepper
Cooking Directionns:
Saute onion in a small skillet in butter. In a bowl mix together cream cheese, salt, pepper, and garlic. Stir in chicken and sautéed onion and butter. Grease bundt pan with cooking spray. Unroll crescent rolls, press into bottom and up sides of bundt pan. Turn crescent rolls in opposite directions, pressing seams together. Layer chicken and cream cheese over crescent rolls, half of broccoli, then American cheese, remaining broccoli and top with remaining cheese. Take remaining crescent rolls and place over the chicken and broccoli layers, working to meet bottom crescent rolls. (You may have a few pieces of crescent rolls left over.) Gently press seams together. Bake at 350 degrees for 45-60 minutes. Cool 3-5 minutes and serve in slices.
